An irresistibel vegan soup collection
Today I’m not only sharing a collection of amazing healthy vegan soups but also use the opportunity to introduce some amazing food blogger colleagues to you. During my time as a recipe creator and food photographer I was lucky enough to get in touch with people which I really appreciate. And now it’s time to introduce them to you. They all super passionated about food and do a great job to satisfy your sweet and savory cravings day by day. So, go, visit their blogs and show them some love & appreciation. 1. pink potato soup
Timothy Pakron aka mississippivegan originally created this creamy pink potato soup recipe for valentines day earlier this year. If you ask me the soup is definitely too pretty to only make it once a year, right?! The recipe is super easy to make and I’m sure you’ll impress your guests if you serve it. I met Timmy as I moved from Thailand to the US in 2017. He was my very first friend in Jackson, Mississippi. Our love for food and photography connected us and we had a very great, funny and emotional time during his process of creating his first cookbook (secret tip: you MUST check his book, it’s super amazing!!). 2. indian tomato & coconut soup with chapati
I loooove the Indian kitchen. All the different colors, flavors and spices are simply wonderful. Funny enough that I had my first Indian meal while I lived in China. I was super happy about the first Indian restaurant which opened in my city that time and friends and I went there countless times. Laura from @thecookingglobetrotter is introducing this delicious indian tomato & coconut soup accompanied by freshly made chapati on her blog. I found her over instagram a few months ago. And we already found so many similarities while connecting & exchanging. Besides sharing the love for travel we also share the passion for cooking and eating creative delicious food. Laura clearly expresses this special love in her recipes.
3. leek wild garlic soup
Sarah-Vanessa aka velvetandvinegar is based in Switzerland and shares incredible delicious recipes in Englisch and German on a regular base. One of her latest creation is this amazing leek wild garlic soup. The hand picked wild garlic, which grows in Germany, Austria and Switzerland en masse if spring arrives, makes this dish very special. Sarah-Vanessa also made some homemade pasta and a wild garlic hummus. And while I imagine how amazing these dishes must taste I need to admit I’m getting a little hungry. I’m not sure if you can find wild garlic in your area. If you can’t find it simply replace the wild garlic with the same amount of fresh spinach. The only thing I know for sure is that this soup MUST find it’s way to your table!
4. cashew split pea soup
Francesca from plantifullybased started her food journey with an anonymous instagram account for her 30 Vegan Days experiment in April 2016. In the meantime, she is a professional food photographer who shares mouthwatering vegan food porn on her instagram account on a daily base. I’m happy to show you one of her amazing creation in this soup special today. You definitely must visit her and try this creamy cashew split pea soup – I bet you will freak out!
5. cheesy pasta soup with vegetables
Silvia & Marc are my favorite vegan foodie couple in the world wide web. They create super delicious vegan dishes mainly using instagram (gone_vegan) as a platform to express their creativity. Besides delicious food they also write really entertaining captions & comments which always makes me laugh out loud. Their humor is just great. 10 oz macaroni
1 large potato, cut in 4 parts
1 large carrot, diced
1 large onion, diced
1 celery stick, sliced
2 tbs nutritional yeast
2 tbs cream cheese
Salt and pepper
Olive oil (optional)
Boil the vegetables in 1,5 liters water for about 20 min (or until the potato in soft). Mash the potato with a potato masher or a fork and place it back in the pot with rest of the veggies. Season with salt and pepper to taste.
Boil the macaroni in the veggie broth as per instructions on the pack (about 12 minutes), add the nutritional yeast and the cream cheese, stir to combine and serve. Add a tsp olive oil on each bowl for a richer taste (optional).
6. smoked sweet potato soup
I shared the picture of this gluten free hearty smoked sweet potato soup on my instagram account (veganstars) a few weeks ago but then I recognized I never shared the recipe her on my blog. Taking this blog post as an opportunity correct this omission cause this soup is just to good not to make it public and share with you. Here’s what you’ll need:
makes 2 servings
2 cups sweet potato, pre-cooked
3 cups filtered water
2 cloves garlic
2 tbsp nutritional yeast
1 1/2 tsp sea salt
1/4 tsp pepper
1/2 tsp smoked paprika powder
1 pinch cayenne pepper
1 tsp fresh basil to garnish
a drizzle chili oil (optional)
Add all ingredients to a high-speed blender and blend until smooth. Transfer the soup to a pot. One medium heat slowly warm up the soup. Top with chili oil if you like and garnish with fresh basil. ENJOY!
