How to make the best Arancini (vegan):

For this arancini recipe you need:

  • tomato or bolognese sauce

Description

Arancini are one of my favorite Italian snacks. Not only cause they are super delicious but also because I connect a special memory with them. The filling of these little rice balls is variable. Be creative and share your innovations with me in a comment below. If you have some leftover rice and bolo sauce they can be prepared super quick.

Ingredients

  • 4 cups sushi rice, cooked
  • 1/2 cup water
  • 1 sachet saffron (0.12g)
  • 1/4 cup smoked tofu, small cubes
  • 1/2 cup bolognese sauce
  • 1/4 cup peas, frozen
  • 1/2 almond milk (optional: soy, oat, rice milk)
  • 3 tbsp soy flour
  • 1 pinch black salt (kala namak)
  • 1 ½ cups bread crumbs (gluten free version available, e.g. Panko)
  • some spraying oil

Instructions

  1. Preheat the oven to 425°F
  2. Add water and saffron powder to a bowl
  3. Mix well and add the rice. Set aside
  4. In the meantime, roast the tofu in a pan on medium heat
  5. Add the bolognese sauce and the peas to the pan
  6. Cook everything for 3 minutes. Set aside and let cool
  7. In a deep plate mix milk, soy flour and black salt until you get a smooth batter
  8. Take 1/4 cup of rice at a time, place on the palm of your hands and form a mold in the center
  9. Place 2 teaspoons of the filling on the rice and form to a ball
  10. First toss the ball in the batter and then in the bread crumbs
  11. Place arancini on a prepared baking rack
  12. Spray the balls with some oil and bake for 20 minutes until golden braun

Notes

Optional you can prepare the arancini in an air fryer. Simply preheat the device to 400°F, spray the balls with some oil and bake for 15 minutes until golden brown.

Arancini always make me smile as I have this special (and maybe only memory) as I was 3 years old little girl. That time, my parents and me were on the ship to Sicily. My dad brought me one of these delicious arancini. I remember how I took a bite and my taste buds were super excited about the it. I asked my dad to bring me another one. He did with a big smile on his face… I ate at least two (in 25 minutes!) until we arrived and I thought by myself “this is the best thing I have ever tried”. You will know that I’m right if you try them too!
