Description

I have experimented in my kitchen lab just recently and the result was this super declicious cheese cake recipe. I would say it’s the best cheesecake recipe ever! I used teff flour for the base which makes the cake aromatic and gives it a nutty note. This cheesecake recipe is how we Germans know it from our grandma. From now on, it will be stored in my “Best Baking Recipe” box. Convince yourself and give it a go!

Ingredients

Ingredients for the base:

  • 1 cup teff flour
  •  3/4 cup coconut or date sugar
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp flax meal
  • 3/4 cup cold vegan butter

Ingredients for the filling:

  • 1 lb silken tofu
  • 7 oz extra firm tofu
  • 1/2 cup vegan yogurt
  • juice and zest of one organic lemon
  • 1/2 cup cane sugar
  • 1/4 cup potato starch
  • 1 tsp vanilla extract
  • 1 pinch sea salt
  • 1 tbsp vegan butter for the baking form
  • 2 tbsp bread crumbs for the baking form

Instructions

  1. First of all, preheat the oven to 355°F
  2. Add all ingredients for the base to a bowl and knead until combined homogenously
  3. Refrigerate the dough for 30 minutes
  4. In the meantime, add all ingredients (besides the butter and the bread crumbs) for the filling to a blender
  5. Blend on low speed until everything is combined and set aside
  6. Spread butter on baking pan and evenly sprinkle the bread crumbs on it
  7. With your hands carefully press the cold dough into the baking pan
  8. Transfer the filling to the cake base and spread evenly
  9. Bake the cake for 60 minutes without opening the oven
  10. When baking time is over, switch off the oven, leave the cake inside and let cool down completely

Notes

I recommend to allow the cake cooling down completely before cutting. Store in the fridge overnight for best results!

Teff flour is produced from the smallest seed in the world which has its origin in Ethiopia. The grain is glutenfree, and packed with minerals and protein. The taste is aromatic with a nutty note.
