German Dumplings with Creamy Mushroom Sauce

Description

Bread dumplings can be made vegan – here is the prove! The delicious dish is popular in Germany, Austria and Bohemia and fits perfect to a creamy dreamy mushroom gravy.

Ingredients

Ingredients for the dumplings

  • 1 dried or fresh baguette
  • one bunch of parsley, diced
  • 1 onion, finely diced
  • 3 tsp salt
  • 1/4 tsp black pepper
  • 1  cups of any unsweetened plant milk (soy milk, oat milk, almond milk)
  • 2 cups all-purpose flour

Ingredients for the creamy mushroom sauce

  • 8 oz mushrooms, cut
  • 1 small onion, chopped
  • 1 tbsp sunflower oil
  • 1/2 cup white wine (optional: 1/8 cup rice vinegar or white wine vinegar)
  • 23 tbsp cashew cream (optional: 2 tbsp unsweetened cashew or almond butter)
  • 1 cup water
  • 2 tbsp nutritional yeast
  • 1 tsp vegetable broth powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika powder

Instructions

Directions for the German Dumplings

  1. Cut the baguette into small cubes and put into a bowl
  2. Add the rest of the ingredients, besides flour, to the bowl
  3. With a wooden spoon mix everything until mushy
  4. Add the flour and mix again
  5. Sprinkle your working area with some flour
  6. With wet hands form balls and place on your working area
  7. Additionally, sprinkle a bit flour on the top of the bread dumplings
  8. In the meanwhile, bring a pot of salt water to a boil
  9. Turn the heat down to simmer
  10. Carefully place bread dumplings into the water. The water should not boil anymore
  11. The dumplings will sink to the ground
  12. Allow them to simmer for around 20 minutes until done
  13. If bread dumplings are done they will float back to the water surface
  14. Drain the dumplings and set aside

Directions for the creamy mushroom sauce

  1. Heat the oil in a pan on medium heat
  2. Add onions and mushrooms
  3. Brown for 5 minutes
  4. Deglaze the mushrooms and onions with white wine (or white wine vinegar)
  5. Let the the base simmer for 30 seconds
  6. Add water, nutritional yeast and vegetable broth, stir well
  7. With help of a whisk stir in cashew cream (or nut butter)
  8. Simmer on medium low heat until you get a thick sauce
  9. Season the sauce with salt, pepper and paprika powder or just according to your taste
