I wanted to share a one pot dish on my blog for a long time already. So today is the day! Finally! First, I thought to make a classic tomato sauce pasta dish but than I thought it would be bit boring. As I opened my fridge these beautiful edamame and the spinach screamed: “Heeeere, we are here! Use us for a one pot dish!”. Well, okay, here we go!

  • 1 cup edamame, frozen
  • 1 cup fresh spinach
  • 2 cloves garlic
  • 1/4 onion, thinly sliced
  • 1 cup farfalle, uncooked
  • 1/2 cup vegan cashew yogurt, unsweetened (optinal: soy, coconut)
  • 1 ½ tsp sea salt
  • 1/4 tsp pepper
  • 1/4 tsp chili flakes
  • 1 ½ cups water

  1. Place a bowl on your countertop
  2. Put all ingredients, besides the oil and the water, into the bowl
  3. Heat the olive oil in a medium-sized pot over medium heat
  4. Transfer the ingredients from the bowl to the pot
  5. Sauté the ingredients for around 2 minutes and deglaze with water
  6. Put the lid on the pot
  7. Cook for 10 minutes until the pasta is al dente
