Pickled Herring Salad

Pickled Herring Salad is a German classic. Creamy, sour, sweet, crunchy and super good with boiled potatoes or on a sandwich!

  • 11½ oz eggplant, cut lengthwise into 1/4 inch slices
  • 1 ¼ cups (vegan) yoghurt
  • 1 tbsp (vegan) mayo
  • 1 tsp mustard
  • 1 tbsp capers
  • 1 cup pickled cucumbers, finely chopped
  • 2 tbsp pickled cucumber water
  • 1 tbsp apple vinegar
  • 1 stalk celery, chopped
  • 1/2 cup red onion, finely chopped
  • 1 cup apple, chopped
  • 1/2 tsp salt
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1/2 tsp freshly ground pepper


  1. Cover each side of the eggplant slices with some salt and drain the liquid over a cooling rack
  2. With a paper towel dry the excess liquid
  3. Spray a pan with some oil and fry the slices until golden brown but don’t overcook the slices
    (alternative: oil free if your pan is well coated)
  4. Set the slices aside and let cool
  5. In a bowl mix the rest of the ingredients
  6. Cut the cooled eggplant slices into strips and than into small pieces
  7. Fold in the eggplant pieces into the dressing
  8. Let sit in the fridge for minimum 30 minutes, best case over night
