Description

This wonderful Pumpkin Shitake Risotto is the perfect comfort food for the fall season. A creamy but healthy dish for a romantic event for two.

Ingredients

3 tbsp olive oil
2 small orange pumpkins (plus the meat)
2 cups butternut squash, finely cubed
1/2 cup risotto rice (alternative: sushi rice)
1 small onion, finely diced
3 cloves garlic
1/3 cup smoked tofu
1½ cup shitake mushrooms, sliced
1 cup white wine
1 tsp salt
1 tbsp vegetable broth powder
1 tsp pepper
2½ cups water
some vegan parmesan & parsley to garnish


Instructions

  1. Preheat the oven to 350°F
  2. Wash the orange pumpkin, cut of the top and remove the meat
  3. Roughly chop the meat and set aside
  4. Separate the seeds from the meat
  5. Keep the seeds for another recipe
  6. Place the orange pumpkins on a baking rack, brush with olive oil
  7. Sprinkle both pumpkins with two finely sliced cloves of garlic
  8. Set aside the baking rack aside, start preparing the risotto
  9. In a pan heat 2 tbsp olive oil on medium high heat
  10. Add smoked tofu and brown for around 5 minutes
  11. Transfer mushrooms to the pan, brown for another 5 minutes
  12. Add onions, meat of orange pumpkin and use garlic press to add another clove of garlic
  13. Brown for some minutes until you can smell the garlic
  14. Deglaze with white wine and add water
  15. Season with vegetable broth powder, salt and pepper
  16. Add the rice and let simmer on low heat for around 25 minutes until rice is soft
  17. In the meantime, bake the orange pumpkin in the oven for around 15 minutes
  18. The last five minutes add the finely cubed butternut squash to the risotto
  19. Transfer the filling to the pumpkins
  20. Sprinkle with vegan parmesan and top with some parsley

Notes

I was craving a flavorful dish so I just created a recipe which absolutely fits the season. The mildness of the pumpkin and the aromatic flavor from the shiitake mushrooms goes perfect together with the smoked tofu and a slight taste of roasted garlic.
