Scrambled Tofu is a great alternative to hen’s egg. It gives you the necessary portion of protein. By using black salt you give this dish a great finishing touch. I recommend to make scrambled tofu for an extensive breakfast of brunch at the weekend.

  • 14 oz extra firm tofu, tasteless
  • 3 tbsp smoked tofu, cubed (optional)
  • 1 tbsp oil
  • 2 tsp turmeric
  • 2 tsp kala namak (black salt)
  • 1 tbsp dried shallots (optional)
  • 1 tbsp nutritional yeast
  • Fresh parsley (optional)

  1. First of all, cut smoked tofu into small cubes
  2. Brown in a pan on high heat until crispy and set aside
  3. Drain and paper dry the extra firm tofu
  4. Afterwards, crumble tofu into a small bowl
  5. Sprinkle turmeric and kala namak on it and mix well
  6. In the same pan, add oil and fry charlottes on medium heat
  7. Add tofu to the pan and allow browning by turning the stove to high heat
  8. Finally, mix smoked tofu cubes with natural tofu

Kala Namak, also called black salt, is a pungent-smelling rock salt mostly used in South Asia. In the vegan kitchen it is often used to add a touch of eggy taste to your dish
