You know I have a weakness for any kind of dumplings. But Tofu Shiitake Dumplings are my favorites since I lived in China. These homemade Chinese dumplings are stuffed with a flavorful but easy peasy shiitake mushroom and tofu mixture. I am sure you will get addicted if you make them. Today I am finally share this must-have homemade dumpling recipe on my blog.



Ingredients for the dough:

  • 1 ⅔ cups all-purpose flour
  • 1 tsp sea salt
  • 1 ¼ cups water
  • 3 tbsp vegetable oil
  • some water to seal the dumplings

Ingredients for the filling:

  • 1 tbsp olive oil
  • 3 cups shiitake mushrooms, shredded
  • 1 medium sized red onion, finely diced
  • 14 oz extra firm tofu, crumbled
  • 1/4 tsp turmeric
  • 1 ½ tsp black salt (kala namak), or according taste
  • 1/4 tsp black pepper
  • 1/2 tsp chili flakes (optional)


Instructions for the dough:

  1. Add all ingredients for the dough to a bowl
  2. Knead until you get a smooth non-sticky dough
  3. Place the dough in the fridge for 20 minutes
  4. In the meantime prepare the filling

Instructions for the filling:

  1. Add olive oil to a coated pan and heat over medium-high heat
  2. Transfer the shiitake mushrooms and onions to the pan and brown for 5 minutes
  3. Add the tofu and cook for another 5 minutes
  4. Season the mixture with turmeric, black salt, black pepper and chili flakes (optional)
  5. Let the filling cool for around 10 minutes

Instructions for the dumplings:

  1. Dust your working surface with some flour
  2. Thinly roll out the dough
  3.  Cut out round pastry pieces with help of a dumpling form or a normal glass
  4. Add 1 tsp of the filling to one piece of pastry at a time
  5. Coat the edges with some water drops and seal the dumpling properly


It’s very important to seal the dumplings properly. Otherwise they fall apart during the cooking process. You can boil the dumplings in water or in a simple veggie broth for around 5 minutes. Alternatively, spray a pan with some vegetable oil and brown the Chinese dumplings over medium heat until golden brown. I love to keep it simple and enjoy them with delicious soy sauce

Most of the times I double the recipe and freeze half of the batch. So I am always prepared if I am hungry for vegan Tofu Shiitake Dumplings.
