How to make Vegan Carrot Lox

The first time I saw this carrot lox somewhere on social media I was very sceptical. How can simple carrots be an real alternative for lox? So I went to my kitchen and simplified the recipe according to my needs. As I opened the container after 3 days and I got a noseful of this flavorful smokey aroma I knew, this recipe will stay on my all time favorite list forever.

Served on crostinis it was the perfect appetizer for one of our bbq get together last year. And my guests really enjoyed the carrot lox.

Officially approved by non-vegans and after releasing a HOW TO video on instagram a few days ago, I thought it’s time for a new classic recipe on my blog. Hope you enjoy it as much as I do!

For the carrot lox you need:

  • carrots
  • sea salt
  • lemon juice
  • olive oil
  • water
  • liquid smoke
  • sushi nori sheets
  • kombu sheet (optional)
  • red onion
  • dill

This flavorful vegan carrot lox gets its aroma from a combination of liquide smoke, sushi nori sheets and onions. The lemon juice makes all the flavors pop. Served on crostinis it’s the perfect appetizer for every party and is a star at every weekend brunch!



  • 4 big carrots
  • 1/4 cup sea salt to cover the carrots
  • 1 tsp sea salt for the marinade
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/4 cup water
  • 4 tbsp liquid smoke
  • 2 sushi nori sheets, chopped
  • 1 kombu sheet (optional), chopped
  • 1 red onion, finely sliced
  • some dill for garnish


  1. Preheat the oven to 350°F
  2. Wash & peel the carrots
  3. Place the carrots on a baking rack
  4. Cover the carrots with salt and bake for 30-40 minutes until medium soft
  5. In a container mix together the remaining ingredients for the marinade
  6. If the carrots are ready use a sharp knife to thinly slice the carrots into lox pieces
  7. Transfer the carrot slices into the container
  8. Close the container with a lid and allow to infuse in the fridge for 1-4 days
  9. Shake the container once a day to make sure the carrots are covered well


You can marinade the carrot lox between 1-4 days. The longer you marinade it the better the taste. For me, and that’s only my personal opinion, the vegan carrot lox is perfect after 3 days.
