Vegan Omelette

Vegan Omelette is a great dish if you are planning to have a extended weekend breakfast or brunch. it is filling satisfying and gluten free.

Ingredients

  • 3/4 cup chickpea flour
  • 2 tbsp nutritional yeast
  • 2 tbsp ground flax seeds
  • 1 tsp baking powder
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/4 tsp kala namak salt (black salt)
  • 1/4 tsp pepper
  • 3/4 cup water
  • 5 brown champigons, sliced
  • 1/4 cup smoked tofu, cubed
  • 1/2 onion, chopped
  • 2 tbsp flaxseed oil (or other oil of choice)

For decoration

  • 3 cherry tomatoes, halved
  • 1 tbsp smoked tofu, fried and cubed
  • Some sliced red onions
  • Some fresh oregano

Instructions

  1. Mix all ingredients beside mushrooms, tofu, onions and oil and let sit for 5 minutes
  2. In the meantime, heat a iron skillet with 1 tbsp oil over medium heat and fry smoked tofu until crispy
  3. Set 1 tbsp smoked tofu aside for decoration
  4. Add mushrooms and onions, fry for some more minutes
  5. Transfer everything from the iron skillet to the batter mixture and fold in
  6. Add the other tablespoon oil into the skillet
  7. Pour the batter into the iron skillet and reduce from high to low heat
  8. Add some cherry tomatoes, red onions and smoked tofu on top of the omelette
  9. Cook the vegan omelette until dough curdles for around 5 minutes
  10. Heat the oven to high broil
  11. Place the iron skillet into the oven and broil for around 3 – 5 minutes until golden brown
  12. Add fresh oregano and serve immediately

Notes

If you don’t have an iron skillet flip the omelette with help of a plate and finish it on the stove. In both cases, oven and stove, do not cook to long as the omelette will become dry. I recommend to serve the vegan omelette with roasted bread.
